Paleo BBQ Ribs 

I'm not really one to measure ingredients; I just go with enough seasoning so it just tastes right and try it out as I go.  That may explain my larger frame.  Anyways, I will try my best to compile a recipe you can follow. 

NOTE: This recipe takes some time to make.  If you want to make your ribs fall off the bone, you will need about four to five hours to braise them. 

  • lbs of pork side ribs 
  • 2 cups of beef stock 

Spice rub: 

  • Tbs paprika 
  • Tbs oregano 
  • Tbs garlic powder 
  • Tbs cumin 
  • Tbs cinnamon 
  • Tbs black pepper 

BBQ Sauce: 

  • 1 cup of beef stock 
  • 1 can of diced tomatoes 
  • 2 stalks of celery 
  • 1 small onion 
  • 1 chipotle pepper 
  • 1tsp mustard powder 
  • Tbs garlic powder 
  • Tbs oregano 

To prepare the ribs: 

  1. Mix all the spice rub ingredients together 
  2. Spread on both sides of the rack of ribs 
  3. Refrigerate overnight 
  4. In a casserole dish or cookie sheet, pour 2cups of beef stock and braise ribs at 200 degrees F for 4 to 5 hours or until the meat falls off the bone 

To prepare the sauce: 

  1. In a saucepan, sweat the onions and celery for approximately 5 minutes or until soft 
  2. Add the stock 
  3. Add the rest of the dry ingredients 
  4. Bring to a boil and add tomatoes 
  5. Simmer until sauce thickens 
  6. Pour the sauce into a food processor, blend until smooth 

To finish the ribs: 

  1. Preheat oven to 400 degrees 
  2. Brush the sauce on the ribs 
  3. Place in oven for 15-20 minutes or until the ribs are warm
